The result is a design with dynamic lines, excellent handling and impressive cutting performance that has been "recommended by leading retailers." \n\nEach blade begins as a solid slug of X50CrMoV15 chromium-molybdenum-vanadium alloy, an ideal steel for premium kitchen knives. It is hand-forged in Solingen, structurally optimized and hardened to 58 HRC. A traditional hand grind is then highly polished to extend edge life and refine the cutting performance. The forged bolster provides a secure grip and helps protect the user if the knife slips.
